Ingredients:
- 20 oz crushed pineapple with juice
- 1 tsp salt
- 1 1⁄2 tsp vanilla flavor
- 3 cups rolled oats, uncooked
- 2 large apples, unpeeled, shredded (1 1⁄2 cups)
- 1⁄4 cup toasted almonds, chopped
- 1⁄4 cup unsweetened coconut flakes
- 1⁄2 cup dried papaya pieces or raisins
Directions:
- Dissolve the salt in pineapple and juice. Stir in vanilla and set aside.
- Mix oats, apples, almonds, coconut, and dried fruit in a large bowl.
- Combine the pineapple mixture with the contents of the bowl and mix well.
- Cover and refrigerate overnight.
- Serve with non-dairy milk, topped with sliced ripe bananas.
